the products are home made in small batches, makes her own pectin, uses only 3 or 4 generations back of recipes, no artificial coloring, artificial preservatives or additives, unique recipes that she has made up herself such as Irish Coffee Curd

Why did you become involved in your profession or industry?:
She became involved in her profession because Crossogue Preserves began from very humble beginnings. She started out in the basement of her family home, and the company has grown into a successful branded business.
Extended Bio Profile:
Ms. Molloy's company, Crossogue Preserves, is a family-owned operation with an experienced and dedicated team, whose aim is to produce quality products with efficiency and offer excellent customer service. Branding and networking are very important. All preserves are hand produced in small batches to give jams, jellies, marmalade, curds, coulis, chutneys and relishes a unique and distinctive, full-flavor. They are made using traditional cooking methods and contain no artificial colorings, flavorings or preservatives. Crossogue Preserves sells jams, jellies, marmalade, curds and relishes and its products can be found in some of the most elite food houses and retail outlets nationwide, including All the Kilkenny Design Shops and all the Avocas Handweavers, to name but a few. The company now produces more than 80 different varieties of high quality, natural, full-flavored preserves. Having succeeded in establishing itself in retail outlets and specialist gourmet food stores, Crossogue Preserves has diversified into the expanding and profitable gift hamper market and also has been adopted as the sole preserve makers for the Hotel in Galway and the new Ritz-Carlton Powerscourt in Wicklow. The business continues to grow and is developing a presence on the Internet. Expected increased turnover from Internet sales and from expected export markets will mean that the company must build a new cottage-style factory at Crossogue House, and this is the next exciting development for Crossogue Preserves. At the end of September 2007, she set out in a party of 40 to Arusha, Tanzania, to work for two weeks with the charity Playing for Life (www.playingforlife.ie) founded by Tracey Piggott. The team worked in a palatine mission of three thousand Tanzanians. The skills taught ranged from computer technology, drama, music, sports and preserving. The aim was to help the 14 women in the class to preserve the exotic fruits and vegetables that were in season at the time. Marmalade was made using oranges, lemons and limes. Jams were made using mangoes, passion fruit, pineapple and bananas. Chutneys were made with tomatoes, bananas and melons and jellies with chillies and other fruits. Amazing progress was made, and the preserves produced were given the brand name Pallotti Preserves. Its label was designed by one of the art designers on the trip.

Ms. Molloy was born and raised in Kenya before being trained in England.
